What’s gluten?

It is commonly used in the baking and confectionery industry for its binding and structuring effect, is responsible for the elastic consistency of the masses and its function is to give volume to the resulting product.

It is caused by gluten, being a chronic pathology the only solution for a celiac person is to follow a strict gluten free diet. There are several types of celiac disease, these can be defined according to the symptoms presented.

The main difference between gluten allergy and celiac disease is the immediate allergic reaction and that, in allergy, the body always generates antibodies to gluten without the need to have reached the intestine.
